Fortunately, I used all my willpower to keep these tucked away in the pantry until I was ready to make these Reese’s Pieces Peanut Butter Blondie Bars. The fact that there was still Halloween candy kicking around to appease me may have helped. The other motivating factor was that I was going to make this recipe with my Goddaughter and what would a Reese’s Pieces Peanut Butter Blondie Bar be without Reese’s Pieces!

These blondie bars were a super fun recipe to make with her. She’s nine (let’s not discuss where the years have gone) and is a great helper in the kitchen. Whenever I’m lucky enough to have her at my place, it’s always fun to have a recipe we can make together and send her home with. Mom, dad and little brother are thrilled and it’s a pride and joy moment for her. Win-win!

As a chocolate-lover, I will admit I have never made a blondie before. I may have previously argued, What’s the point when you can have a b-r-o-w-n-i-e? But after, I will admit that the peanut butter flavor really does shine in this blondie bar…if you’re into that sort of thing.

What makes these Reese’s Pieces Peanut Butter Blondie Bars divine is the soft and chewy texture of the brownie combine with the crunchy candy coating from the Reese’s Pieces. You could bake these in rectangular pan for sure but I loved how they turned out in the Pampered Chef Brownie Pan. No worry and fuss in getting the squares just so and everyone gets a perfectly portioned piece!

Ingredients
  1. 1/2 cup (1 stick) unsalted butter
  2. 2 cups packed brown sugar
  3. 1/2 cup peanut butter
  4. 2 large eggs
  5. 1 tsp vanilla extract
  6. 2 1/2 cups all-purpose flour
  7. 1 tsp baking powder
  8. 1/4 tsp baking soda
  9. 1/2 tsp salt
  10. 1-1/2 cups Reese's Pieces
Instructions
  1. Preheat oven to 350F. Grease 2 brownie bar or muffin tins. Set aside.
  2. In a medium saucepan over medium heat, melt the butter and brown sugar, stirring until smooth. Stir in the peanut butter. When smooth, set mixture aside to cool for 10 minutes.
  3. In the meantime, whisk together the flour, baking powder, baking soda, and salt in a large bowl,. Set aside.
  4. To the peanut butter mixture add the eggs, one at a time, mixing well after each egg. Add the vanilla extract. Pour this mixture into the prepared dry ingredients, and stir until batter is smooth. Do not overmix. Fold in the Reese's Pieces, leaving aside a handful to sprinkle on top.
  5. Pour batter into the greased pans, spreading batter evenly. Sprinkle with remaining Reese's Pieces.
  6. Bake for 16-18 minutes or until top is golden brown and edges are slightly browned.
  7. Allow to cool for 10-15 minutes before popping out of tins.
