I am head over heels in love with summer right now.
To be truthful, I’ve always been a bit of a winter lovin’ gal but this year, I’ve decided to embrace summer – the bugs, the heat, the frizz…ugh the frizz! There have been waaaaay too many humid days for me to count and they have all wreaked havoc on my tendrils. LOVING SUMMER – right! What I am totally loving is all the fresh, (somewhat) local produce that’s spilling over the markets. Your body just can’t help but feel good after taking advantage of the in season produce.
This year I am also trying to grow some of my own veggies in the garden but nothing is quite ready for picking yet other than some herbs. I am hopeful that the still green tomatoes, pepper sprouts and cucumber flowers will turn into something soon!
In the meantime – THIS SALAD!
Fig, blueberry and walnut spinach salad with dark cherry balsamic vinaigrette…the title is bursting with as many words as the salad is with flavor! This salad fell together with some go-to ingredients I always have handy like spinach, red onion and (wal)nuts, these gorgeous figs and blueberries I picked up at the supermarket and this amazing Black Cherry Balsamic Vinegar I picked up on a whim at the Olive That! Tasting Bar that sells artisan oils and vinegars in my neighbourhood. I’ve purchased a number of other flavors but the black cherry was a new one for me and I will definitely be back for more!
I really loved how these flavors worked so well together. The blueberries and figs just burst in your mouth with freshness and their sweetness is balanced by the tart balsamic, earthy walnuts and soft spinach. The hint of dark cherry just finishes the salad so perfectly.
Want to make this salad all-in-one meal worthy? I picture a few grilled chicken skewers or a nice filet of salmon would look perfect atop this plate. Me? I ate this for lunch…and dinner just as it was. But hey, that’s me…remember, I’m one of those winter lovin’ gals 😉
- 1/4 cup of olive oil
- 1/4 cup of black cherry balsamic vinegar (or flavor of your choice)
- salt and pepper to taste
- 3 cups of fresh baby spinach
- 1/3 red onion, sliced thin and broken up
- 4-6 fresh figs, roughly chopped
- 1/2 cup fresh blueberries
- 1/2 cup walnuts
- Mix olive oil, balsamic vinegar, salt and pepper. Set aside.
- Gently toss together spinach, onion, figs and blueberries. Drizzle with vinaigrette. Toss walnuts on top.
