Did you skip breakfast?
Every so often I see a post or a magazine article about the importance of eating a healthy breakfast. Is this a thing? I don’t get it. I just don’t understand how skipping breakfast can become a habit. I need food when I wake up in the morning, doesn’t everyone?
I also need food after a nap…but this isn’t about me.
On the other side of the screen, I imagine some of you are saying, “But my mornings are cra-y-zy. I just don’t have the time.” Enter, omelette muffins. See, Teta Lizza is here for you and your breakfast woes.
There is nothing mind-blowing about these omelette muffins other than that they are just THE MOST AMAZING THINGS IN THIS WORLD! That and these adorable omelette muffins are so super simple, delicious and perfectly portioned. Just what you need to scoop up and run with on those oh-so-crazy mornings, and none of the guilt that comes with grabbing the breakfast-sandwich-combo-with-hash-brown-and-what-the-heck-a-donut-too with your morning drive-thru coffee.
Make these omelette muffins on a Sunday night and you’ve got a satisfying and hot-in-seconds breakfast option every day of the week. Great for you, great for kids, great for all of mankind.
And once you’ve made this variation, try a few of your own! Like a little spice? Add some diced jalapenos to the mix. Play around with the ingredients and make these something you truly look forward to in the morning.
- 2 large turkey sausage linkss
- 1 tsp olive oil
- 4 cups fresh spinach, roughly chopped
- 1/4 cup finely diced onion
- 2 cloves garlic, minced
- 1/2 cup part skim mozzarella cheese, shredded
- 1 tsp freshly ground black pepper
- 5 eggs
- 3 egg whites (or 3 oz liquid egg whites)
- 1 cup milk (I used 0% skim)

- Preheat the oven to 325F.
- Begin by slicing the casing of the sausages, removing the filling, and adding it into a hot pan. Discard the casing. Break up the meat with a spatula or wooden spoon and cook through. Once no longer pink, add in the chopped onion and garlic along with the olive oil.
- Once the onions are translucent and looking golden, add the spinach, turn off the heat and gently fold the ingredients together. The spinach will begin to wilt and cook down.
- In a large mixing bowl, whisk together the eggs, egg whites, pepper and milk. Then stir in the cheese.
- Spray a muffin tin with cooking spray, Add a bit of the sausage mixture to each cup and then top with the egg mixture.
- Bake the omelette muffins for 25-30 minutes, or until the tops are just starting to brown. Let cool for 5-10 minutes. Gently remove from tin and let cool completely for storage, or serve immediately.
- To re-heat, microwave on medium for 30-45 seconds.
- No salt? Not a typo! The cheese and sausage lend enough saltiness to the recipe.
